Elizabethtown, NC – March is National Nutrition Month, and the NC Cooperative Extension – Bladen County Center is celebrating by highlighting fresh, in-season produce in their latest newsletter, “Seasonal Eats.” This edition is packed with useful insights on what’s fresh, how to prepare it, and tips for making the most of nature’s bounty.
What’s in Season?
This month’s featured vegetables are asparagus and collard greens, two nutrient-rich choices that can bring both flavor and health benefits to your meals.
- Asparagus – A springtime favorite, asparagus is loaded with vitamins A, C, and K, as well as folate and fiber. Its delicate flavor makes it a great addition to any dish, whether grilled, roasted, or steamed.
- Collard Greens – A powerhouse vegetable from the cruciferous family (which includes broccoli, cabbage, and kale), collard greens are rich in vitamins A, C, and K, along with calcium and fiber. A Southern staple, collards can be cooked in a variety of ways to suit different tastes.
