October brings the pumpkins out and today is National Pumpkin Cheesecake Day. The fall dessert day is celebrated annually on October 21st.

Nicole and Charlotte wanted to take advantage of the national day and celebrate with a “Simple No-Bake Pumpkin Cheesecake” recipe. The duo made a YouTube video with instructions on how to whip up this yummy dessert. View the video linked below.

 

Ingredients:

1 – package of 8 oz. cream cheese – softened
1 – cup of canned pumpkin
1/2 – cup of sugar
Sprinkle of ginger
Sprinkle of cinnamon
Sprinkle of clove powder
1 – 8 oz. tub of Cool Whip topping – thawed, divided
1 – 6 oz. ready-to-use graham cracker crust

Directions:

Mix cream cheese, pumpkin, sugar, and add sprinkles of ginger, cinnamon, and clove powder, then beat together until blended well.

Fold into the mix two and a half cups of Cool Whip.

Fill the pie crust with cream cheese pumpkin mix and smooth it evenly.

Refrigerate for at least three hours. You want the cheesecake to be firm.

Before serving, top the cheesecake with a dollop of Cool Whip.
