Ingredients :

-3 or 4 small oranges
-5 kumquats (optional)
-4 cups cranberries
-1 cup chopped, unpeeled apples
-½ cup seedless raisins
-½ cup chopped walnuts
-2 cups sugar
-½ cup orange juice or water
-1 tablespoon vinegar
-½ teaspoon ground ginger
-½ teaspoon ground cinnamon

Recipe:

Cut oranges into halves; scoop out one cup orange segments, and keep the orange shells for use as garnishes. In a 3 quart saucepan, combine all ingredients, except shells. Heat to boiling, simmer until the cranberries pop and are cooked. Refrigerate the chutney and orange shells. Fill the orange shells with the chutney and use as a garnish; serve remaining chutney in a serving dish.
