Ingredients:

For the Filling:
4 cups fresh or frozen stone fruits (peaches, nectarines, apricots, plums, or a combination)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 tablespoon lemon juice
For the Topping:
1 cup all-purpose flour
1/2 cup rolled oats (old-fashioned)
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
Instructions:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare the filling: In a large bowl, combine the stone fruits, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Toss gently to coat the fruit evenly. Pour the mixture into the prepared baking dish.
Make the topping: In a medium bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Using a pastry cutter or your fingertips, work the cold butter into the dry ingredients until a crumbly mixture forms. The size of the crumbles should vary, with some larger and some smaller.
Scatter the crumbly topping evenly over the fruit filling.
Bake for 45-50 minutes, or until the filling is bubbling and the topping is golden brown. A toothpick inserted into the center of the cobbler should come out clean, with no loose batter.
Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream, whipped cream, or simply on its own.

For a truly delightful Sun’s Up Cobbler, here are some handy tips: Frozen fruit works wonders in this recipe, eliminating the need for thawing beforehand. However, keep an eye on the baking time and add a few extra minutes if the filling appears overly liquid. Remember, the key to a perfect crumble topping is to resist overmixing! Clumps of crumble are what create that irresistible textural contrast. Craving a richer topping? Simply swap out some of the oats for chopped pecans or walnuts. Feeling adventurous with flavors? Don’t be afraid to experiment! A splash of almond extract adds a subtle intrigue to the filling, while a pinch of ground ginger brings a delightful warming touch.

With its vibrant fruit filling and comforting crumble topping, the Sun’s Up Cobbler is a delightful way to celebrate the warm summer months. So, gather your loved ones, bake up a batch of sunshine, and savor the taste of the season!
