A staff reportAs St. Patrick’s Day approaches March 17th, it’s time to don your green attire and embrace the spirit of the Emerald Isle! Whether you’re Irish by heritage or simply Irish at heart, there’s no better way to celebrate this festive occasion than with a feast of traditional Irish dishes. To help you get into the spirit of the holiday, here are three mouthwatering recipes that are sure to make your St. Patrick’s Day celebration a memorable one:

1. Irish Beef and Guinness Stew:     Ingredients:       2 pounds beef stew meat, cut into bite-sized pieces       2 tablespoons olive oil       2 onions, chopped       4 cloves garlic, minced       4 carrots, peeled and sliced       4 potatoes, peeled and cubed       2 cups beef broth       1 (14.9-ounce) can Guinness stout       2 tablespoons tomato paste       1 tablespoon brown sugar       2 teaspoons dried thyme       Salt and pepper to taste    Instructions:     1. Heat olive oil in a large pot over medium heat. Add beef stew meat and brown on all sides. Remove meat and set aside.     2. In the same pot, add onions and garlic. Cook until onions are translucent.     3. Return beef to the pot. Add carrots, potatoes, beef broth, Guinness stout, tomato paste, brown sugar, and thyme. Season with salt and pepper.     4. Bring stew to a boil, then reduce heat to low and simmer for 2-3 hours, or until beef is tender and flavors have melded together.     5. Serve hot, garnished with fresh parsley, alongside crusty bread or mashed potatoes.

2. Colcannon:     Ingredients:       4 large russet potatoes, peeled and cubed       4 tablespoons butter       1 cup chopped kale or cabbage       1/2 cup milk or cream       Salt and pepper to taste    Instructions:     1. Boil potatoes in a pot of salted water until tender. Drain and set aside.     2. In a separate pot, melt butter over medium heat. Add chopped kale or cabbage and cook until wilted.     3. Mash cooked potatoes with butter and kale mixture, gradually adding milk or cream until desired consistency is reached.     4. Season with salt and pepper to taste.     5. Serve hot, topped with a pat of butter and chopped fresh chives.

3. Irish Soda Bread:     Ingredients:       4 cups all-purpose flour       1 teaspoon baking soda       1 teaspoon salt       1 3/4 cups buttermilk    Instructions:     1. Preheat oven to 425°F (220°C). Lightly grease a baking sheet or line with parchment paper.     2. In a large mixing bowl, whisk together flour, baking soda, and salt.     3. Gradually stir in buttermilk until a dough forms.     4. Turn dough out onto a lightly floured surface and knead briefly until smooth.     5. Shape dough into a round loaf and place on prepared baking sheet.     6. Use a sharp knife to score a deep cross on top of the loaf.     7. Bake in preheated oven for 30-35 minutes, or until bread is golden brown and sounds hollow when tapped on the bottom.     8. Allow bread to cool slightly before slicing and serving with butter or your favorite jam.With these delectable recipes, you can create a St. Patrick’s Day feast that would make any leprechaun green with envy!
