With weather like yesterday and today … sunshine, a little on the cool side … I thought back to the 40s and 50s when neighbors would have community wide hog killings. … Some of the must-have items included a place where the hog carcass would be hanging by his hind feet … a sharp knife or two, a wash pot with a fire around it and someone with some knowledge of how and what to do.
Two or more families … work all day long, stuff the sausage and liver pudding and hang along with hams and shoulders in the smoke house and hope for the best … pray no skippers invaded the meet. … Skippers???? think that was one of the bad things that could happen.
One of the side products was hog-head cheese. … Not one of my favorites.
Ever involved or attend a hog killin’???? It was a big event … seldom hear about them anymore.
Today, we go to the store, purchase the portion we desire … prepare and enjoy and never think of the effort. … Actually, we depend on the efforts of Smithfield Foods and other packers to do the ‘heavy lifting’ and we just enjoy the final products … year-round.
