Golden, flaky pastry encasing warm, spiced apples – apple turnovers are a delightful handheld treat perfect for breakfast, dessert, or a satisfying snack. This recipe offers a simple and delicious way to enjoy the comforting flavors of fall any time of year.

Ingredients:

For the Crust:
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup (1 stick) cold unsalted butter, cubed
    • 3-4 tablespoons ice water
For the Filling:
    • 4 large apples (such as Granny Smith, Honeycrisp, or Gala), peeled, cored, and thinly sliced
    • 1/2 cup packed brown sugar
    • 1/4 cup granulated sugar
    • 1 tablespoon cornstarch
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 2 tablespoons lemon juice
    • 1 tablespoon unsalted butter
For the Egg Wash:
    • 1 large egg
    • 1 tablespoon water

Instructions:

  1. In a large bowl, whisk together the flour and salt. Using a pastry cutter or your fingertips, cut the cold butter into the flour mixture until it resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, until the dough just comes together. Be careful not to overmix.
  2. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. In a large bowl, combine the sliced apples, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Toss well to coat the apples evenly.
  5. On a lightly floured surface, roll out the chilled dough to a 12-inch circle. Cut the circle into 8 equal wedges.
  6. Spoon approximately 2 tablespoons of apple filling onto the wider end of each dough wedge.
  7. Brush the edges of the dough with the egg wash (whisked egg and water). Fold the dough over the filling, forming a triangle shape. Crimp the edges with a fork to seal.
  8. Brush the tops of the turnovers with the remaining egg wash.
  9. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the turnovers cool slightly on a wire rack before serving.

With a flaky crust that shatters with each bite and a warm, spiced apple filling bursting with flavor, apple turnovers are a delightful treat that can be enjoyed for breakfast, dessert, or a satisfying snack. This recipe offers a simple and delicious way to create these handheld pockets of goodness at home. For a touch of customization, consider using a blend of all-purpose and whole wheat flour for a richer crust. If your apples are particularly juicy, don’t hesitate to add an extra tablespoon of cornstarch to the filling for a thicker consistency. Remember to seal the edges of the turnovers securely to prevent leakage during baking.

Apple turnovers are incredibly versatile. Brush them with melted butter for a different flavor and texture or sprinkle them with granulated sugar for an extra touch of sweetness. Best enjoyed warm, they can also be stored at room temperature for up to 2 days or frozen for up to 3 months. Reheat frozen turnovers in a preheated oven to bring them back to life.

So, grab your favorite apples, follow this recipe, and create a batch of these delicious pastries. With their simple ingredients and delightful combination of textures and flavors, apple turnovers are a timeless treat enjoyed by people of all ages.
