Dressing:

Ingredients:

For the Salad:

1 bunch of fresh kale, stems removed and leaves torn into bite-sized pieces
1 small butternut squash, peeled, seeded, and diced into bite-sized cubes
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
1/4 cup chopped pecans, toasted
1/4 cup dried cranberries
1/4 cup crumbled feta cheese (optional)

For the Maple Dijon Dressing:

3 tablespoons olive oil
2 tablespoons maple syrup
1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
Salt and freshly ground black pepper, to taste

Instructions:

1. Roast the Butternut Squash:
Preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly. Roast in the oven for about 20-25 minutes, or until the squash is tender and slightly caramelized. Remove from the oven and set aside to cool slightly.

2. Prepare the Kale:
While the squash is roasting, prepare the kale by removing the stems and tearing the leaves into bite-sized pieces. Place the kale in a large mixing bowl.

3. Make the Dressing:
In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, apple cider vinegar, salt, and pepper to create the Maple Dijon Dressing.

4. Massage the Kale:
Pour half of the dressing over the kale leaves. Using your hands, massage the dressing into the kale for about 1-2 minutes. This helps to soften the kale and make it more tender.

5. Assemble the Salad:
Add the roasted butternut squash, toasted pecans, dried cranberries, and crumbled feta cheese (if using) to the bowl with the kale.

6. Toss and Serve:
Drizzle the remaining dressing over the salad ingredients. Toss everything together until well combined.

7. Serve Warm:
Serve your warm kale and roasted butternut squash salad immediately while it’s still warm. The combination of the warm squash with the tender kale and sweet-tangy dressing makes for a delightful winter salad.
