Winter is synonymous with soups and stews. Here’s a recipe for a classic and hearty Beef Stew that’s perfect for warming up during the winter months:

Ingredients:

  • 2 pounds (about 900g) stewing beef, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 2 cups carrots, sliced into rounds
  • 2 cups potatoes, diced into 1-inch pieces
  • 1 cup celery, chopped
  • 1 cup frozen peas
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (for thickening, optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

1. Brown the Beef:

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the cubed beef and cook until it’s browned on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.

2. Sauté the Onions and Garlic:

In the same pot, add the chopped onions and minced garlic. Sauté for about 2-3 minutes until the onions become translucent and fragrant.

3. Deglaze the Pot:

Return the browned beef to the pot. Add the flour (if using) and stir to coat the beef and onions. This will help thicken the stew later.

4. Add the Broth and Water:

Pour in the beef broth and water, stirring to combine. Bring the mixture to a boil.

5. Add Vegetables and Seasonings:

Once the broth is boiling, add the sliced carrots, diced potatoes, chopped celery, bay leaves, dried thyme, salt, and pepper. Stir well to combine all the ingredients.

6. Simmer:

Reduce the heat to low, cover the pot, and let the stew simmer for about 1.5 to 2 hours or until the meat is tender and the vegetables are cooked through. Stir occasionally during this time.

7. Add Frozen Peas:

About 10 minutes before serving, stir in the frozen peas. They will cook quickly and maintain their vibrant color.

8. Serve:

Remove the bay leaves and discard them. Taste the stew and adjust the seasoning with salt and pepper if needed. Ladle the hot beef stew into bowls, garnish with chopped fresh parsley if desired, and serve. Enjoy your homemade hearty beef stew as a comforting and satisfying winter meal. It pairs wonderfully with a slice of crusty bread or some warm rolls.
