If you’ve ever wanted to capture the essence of fresh apples in a delightful spread, making your own apple jelly is the perfect culinary adventure. Here’s a simple and satisfying recipe to guide you through the process:

Ingredients:

– 10 cups of fresh apple juice (preferably from 5 lbs of Fuji apples because they produce the most juice)

– 7 cups of sugar

– 1 pack of Sure Gel (pectin)

– 5 lbs of Fuji apples, cored and cut into chunks

– 1/2 teaspoon of Butter

– Cinnamon

– at least 5 – 8 ounce jars and lids for canning

Instructions:

1. Prepare the Apples:

– Core and cut the Fuji apples into chunks.

– Place the apple chunks in a pot and bring them to a boil. Boil until the apples are soft and can be easily mashed.

2. Prepare Jars and Sugar Mixture:

– While the apples are boiling, get your jars and sugar ready.

– Measure out 7 cups of sugar and have it ready in a bowl.

– Ensure your jars are clean and ready for filling.

3. Strain the Apples:

– Once the apples are soft, strain them.

Note- You may use a food mill to strain the soft apples, producing applesauce. You may add sugar too fast.

4. Combine Ingredients:

– Pour the apple juice back into the pot.

– Stir in the sugar with the Sure Gel and 1/2 teaspoon of butter to help prevent clumping. – For extra flavor, sprinkle in a bit of cinnamon to taste.

– Bring this combination to a rolling boil.

5. Sterilize Lids:

– While the mixture is boiling, place the jar lids in boiling water. Take them off the heat and let them sit in hot water until needed. This action will help seal the leads to the jars.

6. Jar the Jelly:

– Once the apple mixture has reached a rolling boil and is at the jelly stage, it’s time to jar.

– Ladle liquid into jars with a funnel.

– Leave a quarter-inch of space at the top of each jar.

– Wipe the jar rims with a clean, damp cloth.

– Place the sterilized lids on the jars and screw on the bands.

– Invert the jars for at least 5 minutes to ensure a good seal.

7. Cool and Store:

– Allow the jars to cool completely before storing them in a cool, dark place.

Congratulations! You’ve just made your own batch of delicious homemade apple jelly. Enjoy it on toast, as a topping, or get creative with your culinary uses.
